Alex Jack passes new hygiene tests
STRANRAER butcher
Alex Jack is the first in Dumfries and Galloway and maybe
the first in Scotland to pass stringent new hygiene tests.
The business
in Bridge Street heads the queue to be licensed under new
Government regulations by Dumfries and Galloway Council.
And when Ian
Jack contacted the Scottish Federation of Meat Traders Associations
to tell them of his success, they said they did not know of
any other butchers in Scotland who had passed so far.
Mr Jack has
been preparing for the new legislation for the past two years.
He explained
"I realised
changes were on the way. I am extremely pleased we have
gained the new certificate. All the investment in new equipment
and training has been worthwhile".
The new law
has come in the wake of the e-coli disaster in Central Scotland
and is designed to separate the displaying and handling of
cooked and raw meats to avoid cross-contamination.
Each business
will have to pass an annual check.
