FRYER Romano Petrucci is hoping his family's
unique fish supper recipe
can land him a place in the final of a champion chipper award.
The
charismatic proprietor of Stranraer's Central Cafe
has progressed to the
second stage of the British Fish and Chip Shop of the Year
awards.
And
while he acknowledges he has little chance of hooking the
prize for
Britain's best supper, Romano is keen that his staff
gain the recognition he
says they deserve by reaching the final in London.
The
37-year-old, whose family have owned the cafe since they
moved into
Stranraer 43 years ago, says it is the traditional recipe
which makes his
haddock and chips a favourite.
And
like all good chefs, he is unwilling to share the secret.
" We
pride ourselves on our fish and chips" he said.
"And
it would be nice to
get some recognition for that.
"Fish
and chips is still a favourite in Britain and in Stranraer
I suppose
we are a bit out of the road and thankfully a
little bit set in our ways, so
it is still a best seller".
Indeed
Romano estimates that he sells 2000 fish suppers a week
from the
Central Cafe.
